Ingredients
11 ounces Fresh broccoli crowns
3 cloves Garlic cloves, minced
14 ounces Andouille sausage, sliced into rounds
2 tablespoons Vegetable oil, divided
¾ teaspoon Cajun seasoning with salt
⅔ cup Water
Directions
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once shimmering, add the sliced andouille sausage and cook for 4–5 minutes, stirring occasionally, until the edges are browned. Transfer the sausage to a clean plate.
Add the remaining 1 tablespoon of oil to the same skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the broccoli crowns to the skillet and sprinkle with the Cajun seasoning. Stir to coat the broccoli evenly with oil and seasoning.
Pour the water into the skillet and return the cooked sausage to the pan. Bring to a simmer, then reduce heat to medium. Cover and cook for 8–10 minutes, stirring occasionally, until the broccoli is tender-crisp and most of the water has reduced. If needed, uncover in the final minutes to allow excess liquid to evaporate.
Taste and adjust seasoning if desired. Divide among serving bowls and serve immediately.
