Ingredients

2 cups low-sodium canned beans, drained (or cooked dried beans)

1 large egg, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

2 teaspoons Italian seasoning

1 cup dry bread crumbs (or cracker crumbs)

1/8 cup cornmeal (or all-purpose flour for rolling)

2 tablespoons vegetable oil

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Drain the canned beans well and place them in a large mixing bowl. Mash the beans with a fork or potato masher until mostly smooth with some small chunks remaining.

  3. Pour the beaten egg into the mashed beans. Add the garlic powder, onion powder, and Italian seasoning. Stir all ingredients together until well combined and evenly distributed.

  4. Add the bread crumbs to the bean mixture and stir thoroughly to combine. The mixture should hold together when squeezed.

  5. If the mixture feels too wet or sticky, add more bread crumbs one tablespoon at a time, stirring after each addition, until the mixture reaches a firm texture similar to meatloaf.

  6. Shape the mixture into 8 oval patties or small sausage-shaped forms, about 1/2 inch thick.

  7. Spread the cornmeal (or all-purpose flour) on a flat plate. Carefully roll each patty in the cornmeal, coating both sides evenly, and place on a clean surface.

  8. Heat the vegetable oil in a large skillet over medium heat. Once the oil is warm, carefully place the patties in the skillet, working in batches if needed to avoid crowding. Fry for about 3 to 4 minutes per side, until the patties develop a golden brown and crispy exterior. Serve warm.
