Ingredients

1 block fresh feta cheese, well drained

3 tablespoons Olive oil for drizzling and cooking

Freshly cracked black pepper to taste

6 sprigs Fresh thyme sprigs

Directions

  1. Heat your grill to medium-high heat (approximately 375°F to 400°F), arranging coals for indirect heat so the cheese will not sit directly over flames.

  2. Place the drained feta block onto a large sheet of heavy-duty aluminum foil.

  3. Drizzle 2 tablespoons of olive oil evenly over the top of the feta cheese.

  4. Season generously with freshly cracked black pepper to your preference.

  5. Arrange fresh thyme sprigs across the surface of the cheese.

  6. Tightly wrap the foil around the feta, sealing all edges securely to trap the heat and steam.

  7. Place the foil packet on the cooler, indirect heat side of the grill and cook for 10 to 15 minutes, turning occasionally to ensure even warming.

  8. Carefully unwrap the foil packet and remove the thyme sprigs from the top of the cheese.

  9. Transfer the warmed feta to a grill-safe pan or directly onto an oiled grill grate positioned over direct heat.

  10. Grill for 2 to 3 minutes until the top develops a light golden char and slight crust.

  11. Transfer the charred feta to a serving platter.

  12. Drizzle with an additional tablespoon of extra virgin olive oil.

  13. Garnish with fresh thyme sprigs and serve warm alongside warm pita bread, grilled bread, or fresh vegetables.

All four ingredients are stocked at every major Charlotte chain, with quality feta and fresh thyme readily available year-round at Harris Teeter, Kroger, and Publix. At roughly $2–3 per serving for cheese and oil, this is a genuine bargain for an entertaining dish. The twenty-five-minute claim is honest if thyme soaks while you prep the grill, though expect ten minutes of marinating time to actually build flavor. This works as a side or appetizer that reheats gently and impresses without fuss, making it a natural fit for a weeknight table with minimal hands-on work.
