Ingredients
6 tablespoons coconut milk
1 tablespoon Thai red curry paste
2 1/2 teaspoons fresh lime juice
2 teaspoons soy sauce
2 teaspoons Asian fish sauce
2 teaspoons honey
1 teaspoon grated fresh ginger
Directions
In a small mixing bowl, combine the coconut milk and Thai red curry paste. Whisk together until the curry paste is fully dissolved and the mixture is smooth and well blended.
Stir in the fresh lime juice, soy sauce, and fish sauce. Mix thoroughly to incorporate all the liquid seasonings.
Add the honey and grated fresh ginger to the bowl. Stir until all ingredients are evenly distributed and the sauce has a uniform consistency.
Taste and adjust seasonings as desired—add more lime juice for brightness, honey for sweetness, or fish sauce for depth. Serve immediately or refrigerate until ready to use.
