Ingredients
4 cups zucchini, thinly sliced
1/2 cup onion, sliced
2 tablespoons water
1 tablespoon margarine
Black pepper, to taste
3 tablespoons grated Parmesan cheese
Directions
Wash your hands thoroughly with soap and clean running water.
Rinse the zucchini under cold running water. Trim the ends and slice thinly into rounds or half-moons. Peel and slice the onion into thin rings or half-moons.
Heat the margarine in a large frying pan over medium heat until melted. Add the sliced zucchini, onion, and water. Season with black pepper to taste.
Cover the pan with a lid and cook over medium heat for 1 minute to help release the vegetables' moisture.
Remove the cover and continue cooking, stirring and turning the vegetables with a large spoon occasionally, until the zucchini is crisp-tender and lightly golden, about 10 minutes total.
Sprinkle the grated Parmesan cheese over the cooked vegetables and toss lightly with a large spoon until combined.
Transfer to a serving dish and serve immediately while still warm.
