Ingredients
24 Jumbo tiger shrimp, halved lengthwise
2 Garlic cloves, minced
2 generous handfuls Fresh basil leaves, shredded
¼ cup Extra-virgin olive oil
Directions
Cut each jumbo shrimp in half lengthwise. Mince the garlic cloves finely. Shred the fresh basil leaves into thin pieces. Combine the shrimp halves, minced garlic, shredded basil, and olive oil in a glass bowl and toss gently to coat everything evenly.
Cover the bowl with plastic wrap and refrigerate for about 1 hour to allow the flavors to infuse into the shrimp.
Remove the shrimp from the refrigerator 30 minutes before cooking to bring closer to room temperature.
Preheat your oven broiler to high. Spread the marinated shrimp halves in a single layer on a baking sheet, scraping any basil oil from the bowl over the shrimp.
Broil for 5 minutes, until the shrimp flesh turns opaque and is cooked through (internal temperature reaches 145°F). Serve immediately.
