Ingredients
1 (16 oz) package frozen creamed spinach
1 packet (1 oz) vegetable soup mix
1 cup sour cream
1/4 cup shredded low-fat mozzarella cheese
1/4 cup grated pecorino romano cheese
Tortilla chips for serving
Directions
Preheat the oven to 350°F. Cook the frozen creamed spinach according to the package directions and transfer to a mixing bowl.
Allow the spinach to cool for 2–3 minutes so it is warm but not steaming. This prevents the sour cream from curdling when combined.
Stir the vegetable soup mix into the warm spinach until fully incorporated.
Add the sour cream, shredded mozzarella cheese, and grated pecorino romano cheese to the spinach mixture. Fold and stir until all ingredients are evenly combined and no dry streaks remain.
Transfer the mixture to an oven-safe baking dish and spread in an even layer.
Bake uncovered for 15 minutes, until the dip is heated through and the edges are beginning to bubble.
Remove from the oven and let rest for 1–2 minutes before serving warm with tortilla chips on the side.
