Herbed Cajun Potatoes

Crispy pan-fried baby potatoes seasoned with Cajun spices and topped with a tangy herb-infused sauce. These golden-brown potato patties are finished with fresh basil for a vibrant, flavorful side dish or light main course.

Ingredients
10 small baby potatoes, parboiled
1 cup oil for frying
2 tsp cornflour
1 tsp dried oregano
1 tsp red chilli flakes
Salt to taste
2 tsp mayonnaise
2 tsp tomato ketchup
1 tsp fresh basil leaves, chopped
Directions
Pat the parboiled potatoes dry with a clean kitchen towel. Gently flatten each potato with the palm of your hand until about ½ inch thick.
In a small bowl, mix together cornflour, dried oregano, red chilli flakes, and salt. Sprinkle this mixture evenly over both sides of each flattened potato.
Heat the oil in a large skillet over medium-high heat until shimmering. Working in batches, carefully place the seasoned potatoes in the hot oil.
Fry the potatoes for 4–5 minutes per side until golden brown and crispy. Remove with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil.
In a small bowl, whisk together mayonnaise, tomato ketchup, and a pinch of salt until well combined.
Arrange the fried potatoes on a serving platter. Spread or drizzle the sauce over the top of each potato.
Finish by sprinkling the fresh chopped basil leaves over the potatoes and serve immediately.
