Ingredients

1 ripe banana

1¼ cups plain Greek yogurt

2 tablespoons maple syrup

1 teaspoon vanilla extract

pinch pinch of salt

1 cup sliced strawberries

1 cup blueberries

Directions

  1. In a blender, combine the Greek yogurt, banana, salt, vanilla extract, and maple syrup. Blend until the mixture reaches a smooth, creamy consistency. Divide this vanilla-banana layer evenly among your ice pop molds, filling each mold about one-third of the way up.

  2. Add the sliced strawberries to the remaining yogurt mixture in the blender. Blend until completely smooth and well combined.

  3. Carefully pour the strawberry layer over the vanilla-banana layer in each mold, again filling them to about two-thirds of the way up.

  4. Add the blueberries to the remaining mixture in the blender and blend until completely smooth.

  5. Pour the blueberry layer on top of the strawberry layer in each mold to fill them to the top.

  6. Insert popsicle sticks into the center of each mold. Freeze for at least 3 hours, or preferably overnight, until completely solid.

  7. To remove the popsicles, run the mold under warm running water for about 1 minute, which will help loosen the frozen pop from the sides of the mold. Gently push or pull the stick to release each popsicle. Serve immediately and enjoy.
