Ingredients

⅔ cup rolled oats

3 tablespoon pecans, chopped

1 egg white

1½ tablespoon Splenda brown sugar

3 tablespoon peanut butter

2 tablespoon honey

1 teaspoon vanilla extract

dash salt

3 tablespoon ground flax meal

2 tablespoon white whole wheat flour

3 tablespoon mini chocolate chips

Directions

  1. Preheat your oven to 300°F. Spread the rolled oats and chopped pecans on a baking sheet and roast them together for about 15 minutes, stirring occasionally, until they are lightly browned and fragrant. Remove from oven and allow to cool completely.

  2. Line a loaf pan with non-stick aluminum foil, allowing the foil to extend above the edges of the pan for easy removal later. Lightly spray the foil with cooking spray.

  3. In a medium mixing bowl, whisk together the egg white, peanut butter, honey, Splenda brown sugar, vanilla extract, and salt until the mixture is smooth and well combined.

  4. Add the white whole wheat flour and ground flax meal to the wet mixture and stir until fully incorporated.

  5. Fold in the cooled roasted oat and pecan mixture along with the mini chocolate chips, stirring until everything is evenly distributed throughout the batter.

  6. Transfer the mixture to the prepared loaf pan and firmly press it into an even, compact layer using a spatula or the back of a spoon.

  7. Bake in the preheated 300°F oven for 20 to 22 minutes, until the bars are set and lightly golden on top.

  8. Remove from the oven and allow to cool for 2 to 3 minutes. Gently pull the foil wings up and transfer the entire baked bar block onto a cutting board. Cut immediately into 6 equal bars and serve.
