Ingredients

1/2 ounce Demerara sugar syrup

1 1/2 ounces Irish whiskey

4 ounces hot filtered coffee

1 ounce whipped heavy cream

to taste Fresh nutmeg, grated

2 cups granulated Demerara sugar

2 cups water

Directions

  1. To prepare the Demerara sugar syrup, combine the granulated Demerara sugar and water in a medium saucepan over medium heat. Stir gently and continuously until the sugar dissolves completely, being careful not to allow the mixture to boil. Once the syrup has thickened slightly, remove from the heat and allow to cool. Transfer to a glass bottle using a funnel and store in the refrigerator for up to 2 to 3 weeks.

  2. Pour the hot filtered coffee into an Irish coffee glass or heat-safe mug.

  3. Add the Irish whiskey and the Demerara sugar syrup to the hot coffee and stir well to combine.

  4. Carefully float the whipped heavy cream on top of the coffee mixture by pouring it slowly over the back of a spoon, creating a distinct layer.

  5. Garnish the drink with a light dusting of freshly grated nutmeg and serve immediately.
