1 cup canned spinach

1 can (15.5 ounces) low-sodium diced tomatoes

1 can (15.2 ounces) low-sodium corn, drained

3 cups water

1 tablespoon margarine

Directions

  1. Wash your hands thoroughly with soap and clean water before beginning to prepare this recipe.

  2. Drain the canned corn if not already drained and set aside.

  3. In a large saucepan, combine the canned spinach with its liquid, the diced tomatoes with their juice, the drained corn, and the water.

  4. Add the margarine to the saucepan and stir to combine all ingredients evenly.

  5. Cover the saucepan with a lid and bring the mixture to a gentle boil over medium-high heat.

  6. Heat the vegetables for about 10 minutes, or until the mixture is heated through and steaming throughout. Stir occasionally to ensure even heating.
