⅔ ounce Irish whiskey, preferably Bushmills
⅔ ounce oloroso sherry
½ ounce red currant syrup or grenadine
⅓ ounce fresh lemon juice
1 teaspoon cane syrup or rich simple syrup
1⅔ ounce chilled Champagne
small bunch fresh red currants for garnish (optional)
Directions
Fill a cocktail shaker with ice to chill it.
Pour the Irish whiskey, oloroso sherry, red currant syrup, lemon juice, and cane syrup into the shaker with the ice.
Shake vigorously for about 15 seconds until well chilled and combined.
Strain the mixture into a chilled coupe or cocktail glass.
Top with chilled Champagne, pouring slowly to preserve the bubbles.
Garnish with a small bunch of fresh red currants if desired, placing them on the rim or floating them gently on top.
Serve immediately while chilled and bubbly.
