Ingredients

1 lb. spaghetti

Salt for pasta water

2 tbsp. Old Bay seasoning

1 tbsp. extra-virgin olive oil

0.75 lb. andouille sausage, sliced into coins

2 c. fresh corn kernels

0.75 lb. medium shrimp, peeled and deveined

Green onions, sliced

Directions

  1. Fill a large pot with water and bring to a boil over high heat. Add salt and the Old Bay seasoning to the boiling water. Add spaghetti and cook according to package directions until al dente. Before draining, reserve 1 cup of the pasta water. Drain the pasta and set aside.

  2. Heat the olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook for 5 to 7 minutes, stirring occasionally, until the sausage is browned and releases its flavorful oils.

  3. Add the fresh corn kernels and the peeled shrimp to the skillet. Pour in the reserved pasta water and increase heat to bring the mixture to a gentle simmer. Cook for 4 to 5 minutes, stirring occasionally, until the shrimp turns pink and reaches an internal temperature of 160°F.

  4. Add the cooked spaghetti and sliced green onions to the skillet. Toss all ingredients together until well combined and heated through, about 1 to 2 minutes. Serve immediately.
