Ingredients

4 tablespoons butter, at room temperature

1 clove garlic, finely minced

1 teaspoon fresh thyme

4 bone-in pork chops, about 1 inch thick (approximately 2½ pounds total)

Kosher salt and freshly ground black pepper to taste

2 pounds cherry tomatoes

Directions

  1. Mix the softened butter with the finely minced garlic and fresh thyme in a small bowl until well combined. Set the garlic-thyme butter aside.

  2. Preheat your grill to medium-high heat (about 400°F for a charcoal or gas grill).

  3. Pat the pork chops dry with paper towels and generously season both sides with kosher salt and black pepper.

  4. Place the pork chops on the hot grill and cook for 6–7 minutes on the first side without moving them, allowing a nice crust to form.

  5. Flip the pork chops and continue grilling for another 6–7 minutes on the second side until they reach an internal temperature of 145°F measured at the thickest point away from the bone.

  6. While the pork chops are cooking on the second side, scatter the cherry tomatoes directly on the grill grates or in a grill-safe pan. Grill them for 3–4 minutes, stirring occasionally, until they begin to blister and char slightly.

  7. Transfer the grilled pork chops to a serving platter and immediately top each one with a generous dollop of the garlic-thyme butter, allowing it to melt over the warm meat.

  8. Arrange the grilled cherry tomatoes alongside the pork chops, season with a pinch of salt and pepper if desired, and serve immediately while hot.
