A refreshing and elegant frozen dessert combining fresh strawberry purée with citrus notes and sparkling wine. This light, palate-cleansing sorbet is perfect for warm weather celebrations and offers a sophisticated finish to any meal.

Ingredients

3 cups Fresh strawberries, hulled

4 to 6 oz to taste Simple syrup

2 Tbsp Fresh lemon juice

2 Tbsp Limoncello, optional

1 750 ml bottle Prosecco or Moscato or Pinot Grigio, chilled

6 Fresh strawberry, for garnish

Directions

  1. Combine the hulled strawberries, simple syrup, lemon juice, and limoncello (if using) in a blender. Blend until the mixture reaches a completely smooth consistency.

  2. Transfer the strawberry mixture to a bowl and refrigerate for 30 minutes to chill thoroughly.

  3. Pour the chilled mixture into an ice cream maker and process according to the manufacturer's instructions until the sorbet reaches a soft-serve consistency.

  4. Transfer the sorbet to a freezer-safe container and freeze for at least 30 minutes until firm.

  5. To serve, scoop 2 scoops of sorbet into each chilled champagne or rocks glass.

  6. Top each glass with chilled sparkling wine, filling to just below the rim.

  7. Garnish each serving with a fresh strawberry and serve immediately with straws. Store any remaining sorbet in the freezer.
