Ingredients

1 baguette, cut into 4 sandwich-sized lengths and sliced in half lengthwise

4 tablespoons mayonnaise

1 pound Vietnamese caramel salmon, cooked

1/4 cup pickled daikon radish

1/4 cup pickled carrots

1/2 cup cucumber, thinly sliced

2 fresh jalapeno or bird's eye chilies, thinly sliced

1 large handful fresh cilantro leaves

Directions

  1. Prepare the baguette by slicing each of the 4 sandwich-sized pieces in half lengthwise to create a hollow cavity for filling.

  2. Spread 1 tablespoon of mayonnaise evenly on the inside of each baguette half.

  3. Warm the cooked caramelized salmon if desired, then divide it equally among the 4 baguettes, placing it on the mayonnaise-spread bottom halves.

  4. Layer the pickled daikon radish and pickled carrots over the salmon on each sandwich.

  5. Add the sliced fresh cucumber to each sandwich.

  6. Arrange the sliced chilies and fresh cilantro leaves on top of the vegetables.

  7. Close each sandwich by placing the top baguette half over the filling and serve immediately.
