Ingredients
3 cups Fresh corn kernels (about 3 cups)
6 Radishes, thinly sliced
½ Jalapeño pepper, seeded, ribs removed, and finely chopped
3 tablespoons Fresh lime juice
1½ tablespoons Olive oil
3 tablespoons Fresh cilantro, chopped
Salt and pepper to taste
Directions
Cook the corn kernels in a pot of boiling water for about 8–10 minutes, or until tender. Drain and let cool to room temperature.
In a medium bowl, combine the cooled corn, sliced radishes, chopped jalapeño, lime juice, cilantro, and olive oil.
Toss all ingredients together until well combined and evenly coated with the lime-oil dressing.
