1/4 cup fresh cilantro leaves
2 scallions, cut into thirds
1 garlic clove, minced
1 jalapeño pepper, chopped
10 ounces One 10-ounce package frozen chopped spinach, thawed and squeezed dry
1/2 cup mayonnaise
4 ounces cream cheese, softened
1 tablespoon fresh lime juice
Salt to taste
3/4 pound cooked shrimp, chopped
Directions
Pulse the cilantro, scallions, garlic, and jalapeño in a food processor until finely chopped and fragrant, about 30 seconds.
Add the thawed and squeezed-dry spinach to the processor and pulse until well combined with the herb mixture, about 20 seconds.
Add the softened cream cheese and mayonnaise to the processor and pulse until the mixture is smooth and creamy, about 1 minute.
Transfer the dip to a bowl and stir in the lime juice and chopped shrimp until evenly distributed.
Season the dip with salt to taste, stirring well to combine.
Let the dip chill in the refrigerator for at least 20 minutes before serving to allow flavors to meld and the texture to firm up.
