Ingredients
4 cups romaine lettuce, chopped
1 tomato, chopped
1/4 red onion, chopped
1 carrot, peeled and grated
1 tablespoon olive oil
3 tablespoons red wine vinegar
1 teaspoon Italian seasoning
1 dash black pepper
5 ounces canned tuna in water, drained
1/3 cup low-fat mayonnaise
1/4 cup celery, chopped
1/4 cup green onion, chopped
4 whole grain crackers
Directions
Wash your hands thoroughly with soap and warm water before beginning.
In a medium mixing bowl, combine the drained tuna, low-fat mayonnaise, chopped celery, and chopped green onion. Stir until well blended and set aside.
In a large salad bowl, combine the chopped romaine lettuce, tomato, red onion, and grated carrot.
Drizzle the olive oil and red wine vinegar over the lettuce mixture. Sprinkle with Italian seasoning and black pepper.
Toss all the greens and vegetables together until evenly coated with the dressing.
Divide the dressed greens evenly among four serving plates.
Top each portion with an equal scoop of the tuna salad mixture.
Serve each plate with one whole grain cracker on the side.
Comments
Every ingredient is stocked at any Charlotte chain—romaine, tuna, mayo, and whole grain crackers are pantry staples at Harris Teeter, Food Lion, and Walmart alike. Cost lands around $2.50–$3.00 per serving depending on tuna grade and whether you buy name-brand mayo, which is reasonable for a lunch entree. The stated 15 minutes is honest if you assume pre-chopped vegetables; with a knife it stretches to 20–22 minutes. It's a single-plate meal that doesn't require fussing, reheats poorly (greens wilt), and works best as a same-night lunch, which limits its weeknight flexibility for a family dinner.
