Ingredients

Butter for greasing

1 cup Grape-Nuts cereal, coarsely crushed

¼ cup Grape-Nuts cereal, whole

3 cups whole milk

3 large eggs

½ cup white sugar

2 teaspoons vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 pint vanilla ice cream

Directions

  1. Preheat your oven to 350°F. Lightly butter a 9-inch square baking dish or similar 2-quart baking vessel.

  2. Spread the coarsely crushed cup of Grape-Nuts cereal evenly over the bottom of the prepared baking dish. Sprinkle the reserved ¼ cup of whole cereal pieces on top of the crushed layer.

  3. In a large mixing bowl, whisk together the eggs and white sugar until well combined and slightly pale, about 2–3 minutes.

  4. Add the vanilla extract, ground cinnamon, and ground nutmeg to the egg mixture and whisk until fully incorporated.

  5. Gradually pour the whole milk into the egg mixture, whisking constantly to create a smooth custard with no lumps.

  6. Carefully pour the custard mixture over the Grape-Nuts layer in the baking dish, stirring gently to distribute the cereal throughout.

  7. Place the baking dish in a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the baking dish, creating a water bath.

  8. Bake for 50–60 minutes, until the custard is set around the edges but the center has a slight jiggle (the internal temperature should reach 160°F at the center). The pudding should appear golden-brown on top.

  9. Carefully remove the baking dish from the water bath and allow it to cool for 10–15 minutes on a wire rack.

  10. Divide the warm pudding among serving bowls or dishes. Top each portion with a generous scoop of vanilla ice cream and serve immediately while the pudding is still warm.
