Ingredients

2 cups mixed salad greens

1 cup diced tomatoes, cucumbers, carrots, and green beans

1 cup canned pineapple chunks in juice, drained

1 1/2 teaspoons white vinegar

1 tablespoon fresh orange juice

1/4 cup fat-free fruit-flavored yogurt

2 tablespoons chopped nuts

2 tablespoons raisins

Directions

  1. Wash your hands thoroughly with soap and warm water before preparing the salad.

  2. Rinse the mixed salad greens under cold water and pat dry. Arrange the greens on a large serving platter or in a salad bowl.

  3. Chop the fresh vegetables (tomatoes, cucumbers, carrots, and green beans) into bite-sized pieces and place them in a large mixing bowl.

  4. Drain the canned pineapple chunks thoroughly and add them to the bowl with the chopped vegetables. Gently toss to combine.

  5. Spoon the vegetable and pineapple mixture evenly over the prepared bed of mixed greens.

  6. In a small bowl, whisk together the white vinegar, orange juice, and fat-free fruit-flavored yogurt until smooth and well combined.

  7. Pour the yogurt dressing evenly over the salad greens and vegetables.

  8. Sprinkle the chopped nuts and raisins over the top of the salad as a garnish.
