Ingredients

3 cups crushed shortbread cookies

2 cups powdered sugar

¾ cup finely chopped chocolate chips or chocolate bar

¼ cup corn syrup

½ cup rum or liqueur of choice

chocolate candy coating or almond bark for dipping

Directions

  1. In a large mixing bowl, combine the crushed shortbread cookies, powdered sugar, and finely chopped chocolate. Stir until evenly distributed.

  2. Add the corn syrup and rum to the dry mixture. Stir thoroughly until all ingredients are fully combined and a dough-like consistency forms.

  3. Place the dough mixture in the freezer for 30 minutes, or until firm enough to handle and roll into balls.

  4. Break off small pieces of the chilled dough and roll them between your palms to form truffle-sized balls. Place finished balls on a parchment-lined tray.

  5. Return the formed balls to the freezer until they are completely frozen and hardened, at least 1 hour.

  6. Set up a double boiler with hot water in the bottom pot. Place the chocolate candy coating or almond bark in the top pot and melt gently, stirring occasionally until smooth.

  7. Working quickly, remove a few frozen balls from the freezer and dip each one into the melted chocolate using a fork or chocolate fork, ensuring complete coverage.

  8. Place each dipped ball on a parchment or wax paper-lined tray. Allow the chocolate coating to set at room temperature before serving, or refrigerate for faster setting.
