Irish Grilled Cheese

A warm and comforting open-faced grilled cheese sandwich made with buttery rye bread, sharp Irish cheddar, and a tangy mustard spread. Golden-brown and crispy on the outside with melted cheese inside, served alongside briny pickles for a perfect balance of flavors.

Ingredients
2 tablespoons salted butter
2 slices rye bread
1 tablespoon Irish or Dijon mustard
2 ounces aged Irish cheddar cheese, such as Kerrygold
Small pickles for serving, such as gherkins or cornichons
Directions
Warm a skillet over medium-low heat and add the salted butter, allowing it to melt completely and coat the pan evenly.
Place both slices of rye bread in the skillet and let them soak up the melted butter on one side for 1–2 minutes until lightly golden.
Spread the mustard evenly over the buttered side of each bread slice.
Slice the Irish cheddar cheese into thin pieces and arrange half of it over the mustard on the first slice of bread.
Place the remaining cheese on the second slice, then carefully flip the second slice onto the first slice so that the cheese sides face each other and the mustard is between the bread and cheese.
Continue cooking the sandwich in the skillet over medium-low heat for 3–4 minutes until the bottom is crisp and golden brown.
Using a spatula, carefully flip the sandwich and cook the other side for another 2–3 minutes until it is also golden and crispy and the cheese is fully melted in the center.
Transfer the hot sandwich to a cutting board and slice it in half diagonally.
Serve immediately with small pickles on the side while the cheese is still warm and gooey.
