Garlic Butter Salmon with Caramelized Shallot Corn Relish

Ingredients
1½ pounds fresh salmon fillets
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon unsalted butter
2 garlic cloves, minced
1 tablespoon olive oil
2 large shallots, thinly sliced
1 tablespoon brown sugar
3 ears sweet corn, kernels removed from cob
¾ cup diced roasted red peppers or sweet cherry peppers
Directions
Preheat your oven broiler to high. Pat the salmon fillets dry with paper towels and arrange them skin-side down on a parchment-lined baking sheet. Season evenly with salt and black pepper.
In a small saucepan over medium heat, melt the butter. Once foaming, add the minced garlic and cook for 30 seconds until fragrant, stirring occasionally. Remove from heat.
Brush a light coat of the garlic butter mixture over the salmon fillets. Place the baking sheet under the broiler, about 4 inches from the heat source.
Broil for 8 to 10 minutes, depending on thickness, until the salmon is opaque throughout and flakes easily when tested with a fork. The internal temperature should reach 145°F.
While the salmon broils, prepare the relish. In a medium saucepan over medium-low heat, warm the olive oil and add the sliced shallots with a pinch of salt. Cook for about 5 minutes, stirring frequently, until the shallots become soft and translucent.
Increase the heat to medium, stir in the brown sugar, and continue cooking for another 10 minutes, stirring often, until the shallots are deeply caramelized and golden brown.
Add the corn kernels and diced peppers to the saucepan and stir to combine. Cook for 1 to 2 minutes, just until warmed through. Taste and adjust seasoning as desired.
Remove the salmon from the broiler and brush the remaining garlic butter over the top. Arrange the salmon on a serving platter and spoon the warm caramelized shallot corn relish alongside or on top. Serve immediately.
