Ingredients
⅓ cup Olive oil
2 (12 to 16-ounce each) Bone-in pork loin chops
to taste Salt
to taste Freshly ground black pepper
2 pinches Crushed red pepper flakes
1 cup Maple syrup
Directions
Preheat your oven to 500°F.
Pour the olive oil into a large oven-safe skillet and place it over high heat. Allow the oil to heat until it shimmers and moves easily across the pan bottom.
While the oil heats, season both sides of the pork chops generously with salt, black pepper, and red pepper flakes.
Place the seasoned chops into the hot oil, presentation side down, and sear without moving for 3 to 4 minutes until a deep golden crust forms. Flip the chops and sear the other side for another 3 to 4 minutes. If the chops are thicker than 2 inches, use tongs to stand them upright on the edges and sear those sides as well until browned.
Remove the skillet from the heat and carefully pour the maple syrup over the chops, coating them evenly.
Transfer the skillet to the preheated 500°F oven and bake for 20 to 25 minutes, until the chops reach an internal temperature of 145°F when measured with a meat thermometer in the thickest part away from the bone.
Remove the skillet from the oven and place it directly over high heat on the stovetop for about 1 minute, swirling gently, to reduce and thicken the glaze around the chops.
Flip the chops to coat them evenly with the thickened glaze, then transfer to a serving plate and serve immediately.
