Chicken Hara Masala

A vibrant Indian curry featuring tender chicken in a fragrant green masala sauce made from fresh coriander, green chillies, ginger, and garlic, enriched with yogurt and cream. This aromatic dish is mildly spiced and best served with steamed basmati rice or warm naan bread.

Ingredients
500 grams boneless chicken (mix of breast and thigh meat)
1 tablespoon sunflower oil
4 cloves garlic, minced
1 piece fresh ginger (1 inch), minced
1/2 teaspoon red chilli flakes
100 grams fresh coriander (stalks and leaves)
2 green chillies
250 grams live yogurt
1 teaspoon salt
2 tablespoons heavy cream
500 milliliters water
Fresh coriander, chopped, for garnish
Green chilli, chopped, for garnish
Steamed basmati rice or naan bread, for serving
Directions
Roughly chop the fresh coriander (stalks and leaves) and green chillies. Place them in a blender with the minced garlic, minced ginger, yogurt, and salt. Blend until you achieve a smooth, fine green paste.
Cut the chicken into bite-sized pieces, about 1 to 1.5 inches.
Heat the sunflower oil in a large saucepan or deep skillet over medium-high heat.
Once the oil is hot, add the chicken pieces and cook for about 3 to 4 minutes, stirring occasionally, until lightly browned on the outside. The chicken does not need to be cooked through at this stage.
Pour the blended green masala paste over the browned chicken and stir well to coat all pieces evenly.
Add the red chilli flakes and stir to combine.
Pour in the water, stirring gently to combine all ingredients.
Bring the mixture to a gentle boil, then reduce the heat to medium-low. Simmer uncovered for 15 to 18 minutes, stirring occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
Stir in the heavy cream and simmer for another 2 minutes until fully incorporated and the sauce is creamy.
Taste and adjust seasoning as needed. Remove from heat.
Garnish with fresh chopped coriander and sliced green chilli. Serve hot with steamed basmati rice or naan bread.
