Ingredients
4 tablespoons unsalted butter
1/3 cup packed light brown sugar
1/4 cup creamy peanut butter
1/4 cup honey
2 cups quick oats
2/3 cup crispy rice cereal
3/4 cup Reese's peanut butter chips
1/2 cup Reese's Pieces
Directions
In a medium saucepan, combine the butter, brown sugar, peanut butter, and honey. Heat over medium-low heat, stirring frequently until the mixture just comes to a boil. Continue cooking and stirring constantly for 2–3 more minutes until the brown sugar is completely dissolved.
Remove from heat and let the mixture cool for about 5 minutes. While cooling, line an 8×8 inch baking dish with parchment paper or foil, allowing the paper to overhang the sides for easy removal later.
Stir the quick oats and crispy rice cereal into the cooled mixture until everything is evenly coated.
Fold in the peanut butter chips until well distributed throughout the mixture. Pour the mixture into the prepared baking dish.
Sprinkle the Reese's Pieces over the top of the mixture, adding extra peanut butter chips if desired. Use the bottom of a cup or bowl to press down firmly and evenly, ensuring the candies are well embedded so they don't separate when cutting.
Allow the bars to cool completely at room temperature for several hours, or place in the refrigerator to speed up the cooling process (about 1–2 hours).
Using the parchment paper overhang, lift the entire block out of the baking dish. Cut into 12 equal bars and serve.
