½ cup salted, roasted cashews
¼ cup vegetable oil
3 tablespoons unseasoned rice vinegar
¾ teaspoon crushed red pepper flakes
¾ teaspoon fish sauce
¾ teaspoon honey
1 garlic clove, minced
⅓ cup warm water
Kosher salt to taste
Directions
Combine the cashews, vegetable oil, rice vinegar, red pepper flakes, fish sauce, honey, minced garlic, and warm water in a blender.
Blend on medium to high speed for 3–4 minutes, stopping occasionally to scrape down the sides, until the mixture transforms into a smooth, creamy, and fully pourable consistency. No visible cashew pieces should remain.
Taste the dressing and adjust the seasoning by adding kosher salt as needed. Blend briefly to incorporate.
Transfer to a clean container, cover, and refrigerate until ready to use. The dressing can be prepared up to 3 days in advance and stored in the refrigerator.
