A refreshing frozen Italian-style dessert combining fresh strawberries and watermelon into a smooth, frosty treat. Sweetened with simple syrup and brightened with lemon juice, this granita is made by freezing the pureed fruit mixture while stirring regularly to create delicate ice crystals.

Ingredients

1 cup Water

½ cup Granulated sugar

2 cups Fresh strawberries, hulled

2 cups Fresh seedless watermelon, cut into cubes

1 teaspoon Fresh lemon juice

Directions

  1. Combine the water and sugar in a small saucepan over medium-high heat. Bring to a boil, stirring occasionally until the sugar is completely dissolved, about 2-3 minutes. Remove from heat and allow the syrup to cool to room temperature, about 10-15 minutes.

  2. Add the strawberries, watermelon, and lemon juice to a blender. Pour the cooled sugar syrup into the blender as well.

  3. Cover the blender and process on high for 2-3 minutes until the mixture is completely smooth and no pulp remains.

  4. Pour the puree through a fine-mesh strainer set over a bowl, pressing gently with the back of a spoon to extract the liquid. Discard any seeds and solids remaining in the strainer.

  5. Transfer the strained puree to a 9-inch by 4-inch loaf pan. Cover tightly with plastic wrap and place in the freezer.

  6. After 1 hour, remove the pan from the freezer. The edges should begin to look solid while the center remains mostly liquid. Using a fork, vigorously stir and scrape the frozen portions back toward the center, mixing thoroughly.

  7. Return the pan to the freezer and repeat the stirring process every 30 minutes for 3 to 4 hours, until the entire mixture is frozen into fine, uniform ice crystals with a slightly slushy texture.

  8. Once frozen through, scoop the granita into serving glasses and serve immediately. If the granita becomes too solid, allow it to soften slightly at room temperature for 5 minutes before serving.
