Ingredients

3 tbsp Crunchy peanut butter

1 tbsp Thai sweet chilli dipping sauce

½ lime Lime juice

2 Cooked skinless chicken breasts

2 heads Little Gem lettuce leaves

4 Spring onions, trimmed

⅓ Cucumber, cut into fine matchsticks

1 medium Medium carrot, peeled

Directions

  1. Pour 3 tablespoons of just-boiled water into a small bowl with the peanut butter. Stir vigorously until the mixture becomes smooth and fully combined. Add the Thai sweet chilli sauce and lime juice, then mix thoroughly until you have a uniform, pourable sauce. Set aside.

  2. Slice the cooked chicken breasts thinly on a cutting board. Arrange the sliced chicken on the board alongside the bowl of peanut sauce. Separate the Little Gem lettuce leaves and arrange them in one pile. Place the spring onions cut into fine matchsticks in a separate pile, the cucumber matchsticks in another, and the carrot matchsticks in a fourth pile, each one distinct and easy to access.

  3. To assemble each cup, place a single lettuce leaf on a serving plate or in your hand. Layer sliced chicken into the leaf, then add a small handful of the spring onion, cucumber, and carrot matchsticks. Drizzle the peanut sauce generously over the vegetables and chicken. Repeat with the remaining leaves and filling ingredients until all lettuce leaves are filled.
