Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups old-fashioned oats
1 1/2 cups semi-sweet chocolate chips
Directions
Preheat your oven to 350°F. In a small bowl, whisk together the flour, baking soda, and salt, then set this dry mixture aside.
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar on medium speed until the mixture is light, fluffy, and creamy.
Reduce mixer speed to low. Add the eggs one at a time, beating well after each addition until fully incorporated.
Pour in the vanilla extract and mix until well blended.
Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.
Fold in the oats and chocolate chips by hand using a spatula or wooden spoon until evenly distributed.
Cover the dough and refrigerate for 30 minutes to allow the flavors to develop and make the dough easier to handle.
Drop rounded spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Bake for 12 to 14 minutes, until the edges are set and lightly golden but the centers still appear slightly soft. If dough was not chilled, reduce baking time to 10 to 12 minutes.
Remove cookies from the oven and allow them to rest on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.
