Ingredients
1 lb. ground chicken
1/2 c. chopped scallions
1/2 c. chopped fresh cilantro
1/4 c. plain breadcrumbs
1 small lime, zested and juiced
1 tbsp. fish sauce
2 serrano chiles, minced
1 tsp. garlic paste
1 tsp. kosher salt
2 tbsp. vegetable oil
Directions
In a large mixing bowl, combine the ground chicken, chopped scallions, fresh cilantro, breadcrumbs, lime zest, lime juice, fish sauce, minced serrano chiles, garlic paste, and kosher salt.
Mix gently with your hands until all ingredients are evenly incorporated, being careful not to overwork the mixture.
Divide the mixture into 8 equal portions and shape each into a compact patty about 3/4 inch thick.
Heat vegetable oil in a large skillet over medium-high heat until shimmering.
Carefully place the patties in the hot oil and cook for 5-6 minutes per side, until the internal temperature reaches 165°F and the exterior is golden brown.
Transfer the cooked patties to a plate and serve immediately with lettuce wraps, rice, or fresh vegetables.
