Ingredients

2 limes, segmented and finely chopped

2 cm piece fresh ginger, minced

1 shallot, thinly sliced

½ fresh red chilli, finely chopped

1 tablespoon fresh cilantro leaves, chopped

2 tablespoons roasted peanuts, coarsely crushed

1 dash fish sauce

1 small pinch sugar

8-12 baby spinach leaves, rinsed

Directions

  1. In a small mixing bowl, combine the chopped lime, minced ginger, sliced shallot, chopped chilli, and cilantro. Add the crushed peanuts and toss gently to combine.

  2. Season the mixture with a small dash of fish sauce and a tiny pinch of sugar. Stir well and taste, adjusting seasonings as desired.

  3. Arrange the clean baby spinach leaves on a serving platter, laying them flat with the stem end pointing toward the center for easy rolling.

  4. Spoon approximately 1 teaspoon of the lime-ginger mixture onto the center of each spinach leaf.

  5. Serve immediately and invite guests to roll each leaf tightly into a cylinder and enjoy in a single bite.
