Ingredients
1/2 pound ground beef (90% lean)
1/2 cup onion, chopped
1 can (14.5 ounce) diced tomatoes, low-sodium
1 can (6 ounce) tomato paste, low-sodium
1 1/2 cups water
1 teaspoon garlic powder
1 tablespoon fresh parsley, chopped
2 cups egg noodles, cooked
3/4 cup low-fat cottage cheese
1/4 cup grated Parmesan cheese
Directions
Wash your hands thoroughly with soap and warm water before handling food.
Finely chop the onion and set aside.
Heat a large skillet over medium-high heat. Add the ground beef and chopped onion, breaking up the meat as it cooks. Continue cooking until the beef is browned throughout (160°F internal temperature) and the onion becomes tender, about 5–7 minutes.
Carefully drain off any excess fat from the skillet using a spoon or by tilting and pouring into a safe container.
Stir in the canned tomatoes with their juice, tomato paste, water, garlic powder, and fresh parsley, combining everything well.
Bring the sauce to a boil, then reduce heat to medium-low and simmer uncovered for about 25 minutes, stirring occasionally, until the sauce thickens.
While the sauce simmers, bring a separate pot of water to a boil. Cook the egg noodles according to package directions until tender.
Drain the cooked noodles in a colander and set aside.
Add the drained noodles to the beef and tomato mixture in the skillet, stirring gently to combine.
In a small bowl, mix together the cottage cheese and grated Parmesan cheese until well blended.
Using a spoon, dollop the cheese mixture over the surface of the noodle and beef mixture in several portions.
Cover the skillet with a lid and heat over low heat for about 5 minutes until the cheese dollops are warm throughout.
Remove from heat and serve. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
