Ingredients
2 cups all-purpose flour
1 cup white sugar
2½ teaspoons baking powder
½ teaspoon salt
3 tablespoons butter, melted
⅔ cup milk
1 teaspoon vanilla extract
1 egg, beaten
2 cups raspberries
Directions
Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch baking dish with butter or cooking spray.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the melted butter, milk, vanilla extract, and beaten egg to the dry ingredients. Stir until the batter is smooth and no lumps remain.
Gently fold the raspberries into the batter, being careful not to crush them.
Pour the batter into the prepared baking dish, spreading it evenly.
Bake for 35 minutes, or until a toothpick inserted into the cake portion comes out clean and the top is golden brown.
Remove from the oven and allow to cool for a few minutes before serving warm.
