1/4 cup apple cider vinegar

1 teaspoon Creole or yellow mustard

3 tablespoons granulated sugar

2/3 cup real mayonnaise

1/2 teaspoon kosher salt, or to taste

1/4 teaspoon freshly cracked black pepper, or to taste

2 cups broccoli florets

2 cups cauliflower florets

3 cups chopped cabbage

2 cups matchstick shredded carrots

1 cup chopped red onion

1 cup thinly sliced sweet bell pepper

4 slices bacon, cooked and crumbled, optional

Directions

  1. In a small bowl, whisk together the apple cider vinegar, mustard, sugar, mayonnaise, salt, and black pepper until the dressing is smooth and well combined. Set the dressing aside.

  2. In a large bowl, combine the broccoli florets, cauliflower florets, chopped cabbage, shredded carrots, chopped red onion, and sliced sweet bell pepper. Toss the vegetables together until evenly mixed.

  3. Pour the prepared dressing over the vegetable mixture and toss thoroughly until all the vegetables are coated with the dressing.

  4. Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the flavors to meld and the vegetables to absorb the dressing. Stir occasionally if desired.

  5. Just before serving, stir in the cooked and crumbled bacon if using. Adjust the seasoning with additional salt and pepper to taste, then serve chilled.
