Pork and Mango Rolls

Ingredients
½ cup Fish sauce
¼ cup Canola oil
¼ cup Rice-wine vinegar
1 Lemongrass stalk, crushed
2 Garlic cloves, finely sliced
½ inch piece Fresh ginger, finely sliced
1 Green chile pepper, finely sliced
2 teaspoons Freshly ground black pepper
1 pound Pork tenderloin with silver skin trimmed
6 eight-and-a-half-inch Rice-paper wrappers
1 bunch Fresh watercress, washed
½ Fresh mango, peeled and cut into matchsticks
½ small Fresh jicama, peeled and cut into matchsticks
1 cup Fresh basil leaves, washed and dried
Directions
In a bowl, combine fish sauce, canola oil, and rice-wine vinegar. Add the crushed lemongrass, sliced garlic, sliced ginger, and sliced green chile. Stir in the freshly ground black pepper. Set the dipping sauce aside to let flavors infuse.
Season the pork tenderloin generously on all sides. Heat a skillet over medium-high heat and sear the pork for 3-4 minutes per side until browned. Continue cooking until the internal temperature reaches 145°F (63°C) on a meat thermometer, approximately 10-12 minutes total depending on thickness. Rest for 5 minutes, then slice thinly against the grain.
Fill a shallow bowl with warm water. Working with one rice-paper wrapper at a time, dip it briefly in warm water until just pliable—about 2-3 seconds. Lay it flat on a clean surface.
Arrange a layer of watercress on the lower third of the rice paper. Top with sliced pork, mango matchsticks, jicama matchsticks, and fresh basil leaves. Do not overfill.
Fold the bottom edge of the rice paper up and over the filling. Fold in both sides, then roll tightly from bottom to top, sealing as you go. The finished roll should be firm and compact.
Repeat steps 3-5 with the remaining rice-paper wrappers and filling ingredients until all rolls are assembled. Serve immediately with the dipping sauce on the side.
