2/3 cup granulated sugar

1 1/3 cups packed light brown sugar

1 large egg

1 tsp vanilla extract

1 1/4 cups canned pumpkin puree

2 1/2 cups all-purpose flour

1 1/2 cups quick oats

1 tsp baking soda

3/4 tsp salt

1 3/4 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp ground nutmeg

1 3/4 cups semi-sweet chocolate chips

1 cup chopped pecans or walnuts

Directions

  1. Preheat your oven to 350°F. In a medium bowl, whisk together the flour, oats, baking soda, salt, cinnamon, ginger, and nutmeg. Set the dry mixture aside.
