Ingredients

4 tablespoons fresh lime juice

3 tablespoons brown sugar

1 1/2 tablespoons fish sauce

1/4 cup seasoned rice vinegar

1/4 cup water

3 cloves fresh garlic, minced

1 teaspoon garlic chili sauce

Fresh baby scallions, sliced (for garnish)

Directions

  1. Combine lime juice, brown sugar, fish sauce, seasoned rice vinegar, and water in a mixing bowl.

  2. Stir in the minced fresh garlic and garlic chili sauce until well combined.

  3. Allow the sauce to rest at room temperature for 10-15 minutes so the flavors develop and meld together.

  4. Just before serving, top with sliced fresh baby scallions as garnish.

  5. Serve alongside your desired Vietnamese dishes, grilled meats, or fresh vegetables.

Fish sauce is the blocker here—you'll need to make a second stop at Harris Teeter or Kroger's international aisle, since Food Lion and Walmart rarely stock it reliably in Charlotte. The ingredient list is otherwise straightforward and cheap (lime, sugar, vinegar, garlic, scallions are staples everywhere), and the 10-minute claim is honest for a sauce. The real limitation is that two servings is stingy for a condiment meant to last multiple meals; this makes sense as a component rather than a standalone recipe, and it reheats fine. A solid, inexpensive weeknight build once you've got fish sauce in the house, but that first trip cost cuts into the value proposition.
