Ingredients

2 Tablespoon Butter or dairy-free butter substitute

2 Tablespoon Light brown sugar, firmly packed

2 Tablespoon White granulated sugar

½ teaspoon Pure vanilla extract

1 Large egg, lightly beaten

6 Tablespoon Gluten-free all-purpose flour blend

2 pinch Salt

2 pinch Baking soda

3 Tablespoon Gluten-free chocolate chips

Directions

  1. Gather two microwave-safe mugs or cups. Divide the butter evenly between the two mugs, adding 1 tablespoon to each. To each mug, add 1 tablespoon of packed brown sugar and 1 tablespoon of white sugar. Microwave both mugs together for 40 seconds until the butter melts and the mixture is combined. Stir each mug well.

  2. Add ¼ teaspoon of vanilla extract to each mug and stir. Measure out half of the beaten egg (approximately 1½ tablespoons) into each mug and stir until the wet ingredients are fully combined.

  3. Add 3 tablespoons of gluten-free flour to each mug. Add a pinch of salt and a pinch of baking soda to each, stirring until just combined with no flour streaks remaining.

  4. Divide 1 tablespoon of chocolate chips between the two mugs, stirring gently to distribute. Set aside the remaining chocolate chips for topping.

  5. Microwave the first mug on high for 45 seconds until the cookie is set but still slightly moist on top. Repeat with the second mug.

  6. Remove both mugs carefully (they will be hot). Top each warm cookie with approximately 1 teaspoon of the reserved chocolate chips. Allow the cookies to cool for about 10 minutes before eating. Serve plain or topped with whipped cream or ice cream if desired.
