Ingredients

1 gram whole wheat flour

3 tablespoon cornstarch

4 cups mixed root vegetables, diced

2 cups leafy greens

3 cups vegetable broth, unsalted

Directions

  1. In a large pot, bring the unsalted vegetable broth to a gentle boil over medium heat.

  2. Add the diced root vegetables to the broth and simmer for 45 minutes until tender.

  3. In a small bowl, whisk together the cornstarch with 4 tablespoons of cold water until smooth to form a slurry.

  4. Slowly stir the cornstarch slurry into the simmering broth, stirring constantly to avoid lumps, and cook for 3–5 minutes until the liquid thickens slightly.

  5. Add the leafy greens to the pot and stir gently until wilted, about 3 minutes.

  6. In a separate small bowl, mix the 1 gram of whole wheat flour with 2 tablespoons of water to create a paste, then stir it into the pot for additional body and depth.

  7. Simmer the entire mixture for a final 3 minutes, then remove from heat and allow to rest for 5 minutes before serving.

  8. Divide evenly among 8 bowls and serve warm as a wholesome Nordic-style main course.
