Ingredients

2 slices high quality white sandwich bread, crusts removed, torn into rough chunks

2 boneless skinless salmon filets

Kosher salt

Freshly ground black pepper

1 tablespoon unsalted butter, softened

Extra unsalted butter for the salmon

1/2 tablespoon Dijon mustard

1 teaspoon whole grain mustard

1 teaspoon fresh thyme leaves

Directions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly butter it.

  2. Pulse the bread chunks in a food processor until they form coarse breadcrumbs. Transfer to a small bowl.

  3. In the same small bowl, mix the breadcrumbs with the softened butter, Dijon mustard, whole grain mustard, and fresh thyme leaves until well combined. Season to taste with kosher salt and freshly ground black pepper.

  4. Place the salmon filets on the prepared baking sheet, skin-side down. Pat them dry with paper towels.

  5. Lightly brush or dot each salmon filet with a small amount of extra butter. Season with kosher salt and freshly ground black pepper.

  6. Divide the mustard-breadcrumb mixture evenly between the two filets, pressing it gently onto the top of each salmon portion to form an even crust.

  7. Bake in the preheated oven for 10 to 12 minutes, until the salmon reaches an internal temperature of 145°F and the breadcrumb topping is golden and crispy.

  8. Remove from the oven and let rest for 1 minute before serving.
