Ingredients

1 tablespoon vegetable oil

1 1/2 cups Panko breadcrumbs

1/2 cup grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/8 teaspoon garlic powder

1 teaspoon dried Italian seasoning

2 large eggs

2 large boneless, skinless chicken breast halves

1/2 cup grated sharp cheddar cheese or grated mozzarella cheese

2 cups marinara sauce

4 servings angel hair pasta, cooked according to package directions

Directions

  1. Preheat your oven to 400°F (200°C). Lightly brush a baking sheet with the vegetable oil.

  2. In a shallow bowl, combine the Panko breadcrumbs, grated Parmesan cheese, salt, black pepper, garlic powder, and dried Italian seasoning. Mix well to distribute all seasonings evenly.

  3. In another shallow bowl, beat the 2 large eggs together until well combined.

  4. Pat the chicken breast halves dry with paper towels. If they are thick, gently pound them to an even thickness of about 3/4 inch to ensure even cooking.

  5. Dip each chicken breast into the beaten egg, coating both sides, then immediately press into the Panko mixture, pressing gently so the coating adheres on both sides.

  6. Place the coated chicken breasts on the prepared baking sheet.

  7. Bake for 20 minutes, until the coating is golden brown and the chicken reaches an internal temperature of 165°F (74°C) at the thickest part.

  8. Remove the chicken from the oven and spoon 1/2 cup of marinara sauce over each breast. Divide the cheddar cheese equally and sprinkle it over the sauce on each piece.

  9. Return to the oven and bake for an additional 3 to 5 minutes, until the cheese is melted and bubbly.

  10. While the cheese melts, prepare the angel hair pasta according to package directions if not already done. Drain and set aside.

  11. Divide the cooked pasta among 4 serving plates. Top each portion with a cheese-topped chicken breast and any pan juices. Serve immediately.
