Ingredients

1 cup white corn grits (not instant)

Kosher salt

2 tablespoons unsalted butter

4 ounces sharp cheddar cheese, grated

3 garlic cloves, thinly sliced

½ teaspoon crushed red pepper flakes

2 tablespoons honey

1 tablespoon hot sauce

3 tablespoons vegetable or canola oil

1 pound large shrimp, peeled and deveined, patted dry

Fresh cilantro and lime wedges, for garnish

Directions

  1. In a medium saucepan, bring 4½ cups of water to a boil. Using a pressure cooker set to the Sauté setting, carefully add this boiling water. Slowly sprinkle the grits into the water while whisking constantly to avoid lumps. Add 1 teaspoon of kosher salt and continue whisking until the mixture comes to a gentle simmer. Whisk once more to ensure evenness, then seal the pressure cooker according to the manufacturer's directions. Cook at high pressure for 9 minutes. When the timer sounds, manually release the pressure according to the cooker's instructions. Carefully open the lid and whisk the grits vigorously several times until they become smooth and creamy in texture.

  2. While the grits are still hot, whisk in the unsalted butter until fully incorporated. Gradually add the grated sharp cheddar cheese, whisking continuously until completely melted and no lumps remain. Taste the mixture and season with additional kosher salt if needed. Set the grits aside and keep them warm while you prepare the shrimp.

  3. In a medium bowl, whisk together the sliced garlic, crushed red pepper flakes, honey, hot sauce, and vegetable oil until well combined. Add the dried shrimp to this bowl and lightly season with kosher salt. Toss the shrimp until they are evenly coated with the hot honey mixture. Allow the shrimp to marinate in this mixture for 15 minutes at room temperature.

  4. Preheat an air fryer to 450°F. Transfer the marinated shrimp to the air fryer basket and cook, tossing once halfway through, until they turn bright pink and appear opaque throughout, approximately 3 minutes. The internal temperature should reach 145°F.

  5. Give the grits a final vigorous whisk to ensure they remain smooth and creamy. Divide the warm grits evenly into four shallow bowls. Top each portion with the cooked hot honey shrimp and any remaining glaze from the cooking process. Serve immediately with fresh cilantro and lime wedges alongside for squeezing over the top, and offer additional hot sauce on the side for those who prefer extra heat.
