Ingredients

¼ cup almond butter

½ cup almond milk

2 ripe bananas, mashed

¼ cup maple syrup

1½ cups gluten-free oats

1 tsp baking powder

1 tsp vanilla extract

1 tsp ground cinnamon

½ tsp salt

Directions

  1. Preheat your oven to 350°F. Lightly grease an 8x8 inch baking pan with coconut oil or cooking spray.

  2. In a large mixing bowl, combine the almond butter, almond milk, mashed bananas, and maple syrup. Stir until smooth and well blended.

  3. Add the gluten-free oats, baking powder, vanilla extract, cinnamon, and salt to the wet ingredients. Fold and mix until all ingredients are fully incorporated and no dry streaks remain.

  4. Spread the batter evenly into the prepared 8x8 inch baking pan, pressing gently to compact it into a single layer.

  5. Bake for 18-20 minutes, until the top is light golden brown and a toothpick inserted near the center comes out clean or with a few moist crumbs.

  6. Remove from the oven and let the bars cool in the pan for 10 minutes before cutting into 10 equal bars. Cool completely on a wire rack.
