Ingredients
1 cup All purpose flour
1 cup Milk
½ cup Butter, melted
¼ teaspoon Salt
4 ounces Smoked salmon
1 ounce Caviar
½ cup Crème fraiche
Butter for greasing
Directions
In a large mixing bowl, combine the all-purpose flour and salt, whisking together to combine evenly.
Add the milk and melted butter to the flour mixture, stirring until a smooth, lump-free batter forms.
Heat a griddle or nonstick skillet over medium-high heat and lightly butter the surface.
Drop small spoonfuls of batter (about 1 tablespoon each) onto the heated griddle, spacing them apart to form small pancakes about 2-3 inches across.
Cook each blini for 1-2 minutes until the bottom is golden brown and the edges look set.
Carefully flip and cook for an additional 30 seconds to 1 minute on the other side until lightly golden.
Transfer cooked blini to a serving platter and keep warm while finishing remaining batter.
Top each warm blini with a small spoonful of crème fraiche.
Add a small piece of smoked salmon to each blini.
Finish by placing a few grains of caviar on top of each blini and serve immediately.
Comments
Caviar is a non-starter for Charlotte groceries—you'll need a trip to a specialty seafood counter or mail order, which kills the weeknight appeal of this recipe. The blini themselves are straightforward and cheap, but at thirty-five servings with upscale toppings, this is an appetizer recipe dressed as a weeknight meal: budget $60–80 for the caviar alone, pushing the per-serving cost to $2–3 before you account for smoked salmon and crème fraîche. The stated thirty minutes ignores the resting time blini batter needs and the per-blini cooking attention required, making the real time closer to forty-five minutes. This works beautifully for a special occasion or party where you can source caviar in advance and recruit help with the pan, but it's not a family dinner that feeds four or five people on a Tuesday.
