Ingredients

1 1/2 cups old-fashioned oats

1/2 cup coarsely chopped unsalted almonds

1/2 cup whole flaxseed

1 tsp ground cinnamon

1/2 tsp salt

1 egg

1/4 cup raw honey

1 tsp vanilla extract

1 1/4 cups milk

1 cup fresh blueberries

Directions

  1. Preheat your oven to 350°F. Lightly grease an 8x8-inch baking dish with cooking spray and set aside.

  2. In a medium bowl, combine the oats, almonds, flaxseed, cinnamon, and salt. Mix well to ensure the cinnamon and salt are evenly distributed throughout the dry ingredients.

  3. In a separate smaller bowl, whisk together the egg, honey, vanilla extract, and milk until the mixture is smooth and completely combined with no lumps.

  4. Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix.

  5. Fold in the fresh blueberries carefully, distributing them evenly throughout the batter.

  6. Transfer the mixture to the prepared baking dish, spreading it in an even layer. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

  7. Remove from the oven and let the bars cool completely in the baking dish before cutting into 9 equal squares.

  8. Store the bars in an airtight container in the refrigerator for up to one week.
