Ingredients

1 1/2 cups uncooked rice

3 cups water

1/2 cup water

1 teaspoon salt

3 tablespoons margarine or butter

1 medium onion, chopped

1 can (10.75 ounce) reduced-sodium cream of mushroom soup

1 1/2 cups 1% milk

7 1/2 cups frozen broccoli, chopped

8 ounces low-fat cheddar cheese, grated

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Preheat the oven to 350°F. Grease a 12x9x2 inch baking pan with cooking spray or a light coating of oil.

  3. In a medium saucepan, combine the uncooked rice, salt, and 3 cups of water. Bring the mixture to a boil over high heat.

  4. Once boiling, reduce heat to low, cover the saucepan with a lid, and simmer for 15 minutes.

  5. Remove the saucepan from heat and let the rice stand, covered, for an additional 15 minutes to finish cooking and absorb the water.

  6. While the rice is cooking, melt the margarine in a separate skillet over medium heat. Add the chopped onion and sauté, stirring occasionally, until softened and translucent, about 5-7 minutes.

  7. In a large bowl, combine the cooked rice, sautéed onion with margarine, cream of mushroom soup, milk, and remaining 1/2 cup of water. Mix until well combined.

  8. Spread the rice mixture evenly in the prepared baking pan.

  9. Remove the frozen broccoli from the freezer and thaw it according to package directions. Drain any excess liquid. Spread the thawed broccoli evenly over the rice mixture.

  10. Sprinkle the grated cheddar cheese evenly over the top of the casserole.

  11. Bake at 350°F for 25-30 minutes, until the cheese is completely melted and the mixture is bubbly around the edges, indicating the casserole is heated through.
