Ingredients

5 ounces herb salad mix

1 cup roasted red peppers from jar, coarsely chopped

½ cup walnut halves or pecan halves, toasted

10½ ounces feta cheese in oil with herbs and spices

1 tablespoon red wine vinegar

salt to taste

freshly ground black pepper to taste

Directions

  1. Place the herb salad mix into a large bowl. Add the coarsely chopped roasted red peppers and toasted walnuts or pecans.

  2. Open the jar of feta cheese and carefully drain the oil-and-spice mixture into a small bowl, reserving the liquid. Transfer the drained feta cheese to the salad bowl, distributing it evenly over the greens.

  3. Whisk together 3 tablespoons of the reserved oil-and-spice mixture with the red wine vinegar in the small bowl until well combined.

  4. Drizzle the dressing over the salad and toss gently but thoroughly to coat all ingredients evenly.

  5. Season the salad to taste with salt and freshly ground black pepper. Divide among six plates and serve immediately.
